HOW TO: Great Green Pesto

Pesto is a sauce originating in Genoa in the Liguria region of northern Italy, and traditionally consists of crushed garlic, basil and nuts blended with olive oil and cheese.

The best recipes tend to include these ingredients:

2 large handfuls fresh basil leaves
2 garlic cloves, peeled
75g/2½oz pecorino cheese, grated, plus extra to serve
3 tbsp pine nuts, toasted
4 tbsp olive oil
salt and freshly ground black pepper

The key is though, according to 101 Cookbooks, don’t blend it:

During my lesson I quickly began to realize chopping all the ingredients by hand and not blending them is key because this prevents the ingredients from becoming a completely homogenized emulsion or paste.

Then once all the ingredients are finely chopped place in a bowl and mix with good quality extra virgin olive oil until the desired consistency is achieved.
